    Sprouty Avocado Sandwiches (Serves 8)

    Super easy to make and delicious for lunch!




    1 barbequed chicken, shredded
    1/4 cup (75g) Mayonnaise
    1 tablespoon lemon juice
    1 large avocado, mashed
    12 sliced soy and linseed bread
    1 red capsicum, finely sliced
    1 1/2 cups alfalfa sprouts
    1 1/2 cups broccoli sprouts


    1. Combine chicken and mayonnaise in a bowl.
    2. Stir lemon juice into avocado. Season to taste.
    3. Spread 12 bread slices with avocado mixture. Top 4 slices with half of chicken mixture. Top with capsicum and alfalfa sprouts.
    4. Top with 4 more bread slices, avocado side up.
    5. Top with remaining chicken mixture and broccoli sprouts.
    6. Finish with 4 remaining bread slices, avocado side down.
    7. Cut crusts from bread, halve diagonally and serve, or pack in plastic wrap and chill.
